Relatório de estágio supervisionado obrigatório: Laboratório de Qualidade de Lácteos da UFAM

Resumo

Food analysis plays a crucial role in animal production, ensuring the quality and safety of products intended for human consumption. Determining the quality of products of animal origin, specifically milk and meat, involves several factors, including nutritional composition, the presence of contaminants, the sanitary quality of the food and the health, sanitary management and nutrition of the animals. In this context, considering the importance of food analysis and handling related to animal production to guarantee the quality and safety of products for the final consumer, the Mandatory Supervised Internship was carried out at the Dairy Quality Laboratory (LABLAC) of the Institute's Zootechnics Course of Social Sciences, Education and Animal Science (ICSEZ) at the Federal University of Amazonas, Campus Parintins. The internship activities took place from May 2, 2024 to July 17, 2024, totaling 300 hours. The activities included collecting milk samples for physical-chemical analysis, somatic cell counting (SCC), evaluating urea nitrogen in milk (NUL), and monitoring research projects related to analyzing the quality of beef, monitoring the water quality and health and nutritional management of cows and calves. Therefore, laboratory experiences and monitoring of projects related to animal production during the supervised internship enabled the improvement of practical and technical skills in milk and meat analysis, in addition to animal management and its relationship with production and product quality, the application of theoretical knowledge acquired in the classroom during graduation and the learning of teamwork, contributing to the construction of a professional and ethical profile.
